Edibility seminar in Oslo

Last week I was invited to speak at the Centre for Global Sustainability at the University of Oslo, at a seminar called How does food become food? (In)edible resources, sustainability and change. I presented some developing research ideas based on my fieldwork on offal and blood consumption in central and northern Sweden, alongside Prof. Karen Lykke, who talked about disgust and historical animal consumption in Norway, and Prof. Arve Hansen, who introduced the new REPLACE research project he is leading. We had some great discussions and excellent lunch. I will be contributing to the REPLACE project with some fieldwork on alternative proteins in Singapore: you can read more about the project here.
